This artisanal cow's milk cheese is handcrafted and washed rind, following the same techniques as traditional Swiss mountain cheeses. After aging for 24 months, it is delicately matured on cedar wood planks, imparting robust flavors. With a dry and hard texture, its rich and complex taste features nutty notes. Our family dairy farm provides all of the milk used in its production.
It pairs well with red wines such as Pinot Noir and also dark roasted beers.
**This is our favourite for grating over pasta or adding to a Cesar salad in replace of Parmeasan!**
Each piece is around 175g
