A centuries-old cottage tradition, carefully selected durum wheat, semolina, natural water. Carefully controlled dough kneading using bronze drawing equipment. Very slow drying at a low temperature: over 24 hours at not more than 28 degrees celcius, compared with 5 hours at high temperature industrial processes. No preservatives, additives, dyes.
